Cummiskey leprechaun legend has it that to be lucky you need to drink one shake made from the mintiest, greenest ice cream in all the land before the clock strikes midnight. I failed to do this last year on account of my healthier lifestyle and it was the worst year of my life. So, as I compromise I'm going to make my own shake to save on the fat and calories that crazy Ronald McDonald puts in his and cut the serving size in half and then in half again. I figure an ounce of prevention is better than nothing, even if you're not Irish. If you don't want to push your luck, then here's the recipe...
Not As Good But Better For You Shamrock Shake
1/4 cup of reduced sugar/reduced fat vanilla ice cream
1/2 cup almond milk or any low fat milk
1/4 teaspoon mint extract
3 drops of green food coloring
1 tablespoon of Lucky Charms green clovers
1 tablespoon of sugar free cool whip with green sprinkles on top (optional)
Combine all ingredients but the toppings into a blender and blend until smooth. Now, as a side note, some people think they need to add a splash of Guinness or the Irish beer of their choice to give it authenticity but a hint of Irish cream truly makes it magically delicious. Cheers to St. Patrick!
